What is the different between your Benzoin Siam and Benzoin Sumatera?

The main difference is the country from which they originate, otherwise they are the same species of Benzoin.

Dear Sassy,
I would like to change my statement before. I actually would say, smelling more closely that the Siam has a much more spicier note to it, where as the Sumatera has a well rounded more vanilla/oleoresin odour to it.
